How to make a classic gin and tonic

Start by placing a few ice cubes in a tumbler. Pour in 2cl of violet liqueur. Add 4cl of gin, preferably dry, to release the flower's fruity notes.

To make the Gin Fizz, pour in 6 cl of Gin, the lemon juice, the cane sugar syrup and a few ice cubes. Shake well. 

Pour the mixture into a tumbler and top up with very cold sparkling water. Ideally, tilt the glass slightly to release the bubbles and allow them to mix better with the alcohol and syrup.

Gently stir the Gin Fizz with a stirrer or spoon in a slow motion to retain the cocktail's fizz.
